I had the opportunity this week to feature an event many are unaware of.  Once you attend the Capstone Dinner Event you will make a point to never miss one.

This week I invited a representative from The University of Montana College of Technology Culinary Arts Department to join me on the WineGuyMike™ Radio Show©.  Kacey Swanson who is a student in the program and I discussed the upcoming Capstone Dinner Event.

The Capstone Dinner will take place at The Holiday Inn Downtown in Missoula on Saturday April 28, 2012 from 5-10PM.  The Holiday Inn is located at 200 South Pattee, Missoula, Montana.  Ticket prices for this event are $85.00 each.  For information on how to obtain tickets please call 406-243-7870.

I became familiar with the culinary program at a local event that I attend each year where I met the Director of the COT Culinary Arts Program, Tom Campbell.  I sought Tom out at this event on purpose to let him know just how inspired I was as a result of my interaction with his students.  The presentation of the food from this culinary program was beautiful; the passion shared by the students who prepared the courses of food was contagious.  Oh yeah, the food it was amazing too.  I was introduced to an instructor, Chef Suzanne Noyd who also owns The Butler’s Pantry.  The Butler’s Pantry is a catering company providing exquisite fine food for special events.

With my interest piqued I sought out to learn more about this wonderful program located in Missoula and respected regionally throughout the Northwest.  The Capstone Dinner Event is a combination of fine dining, fine wine, and a silent auction in which all proceeds support the College of Technology Culinary Student Education Fund.  This fund also supports competitions, exhibits, and field trips for the students, conferences and the Capstone Dinner Event.

This years event theme presented by the students; “SAUSSURE” (saw-sure), Explore the Alps in Montana – A Culinary Tour of Alpine Cuisine. Horace-Benedict de Saussure led the first expedition through the Alpine Range, believed to have founded Alpinism or Mountaineering.  Translating cuisine from Lyon, France to Vienna, Austria to the shores of the Adriatic Sea and infusing these dishes with Montana seasonal ingredients.  The culinary students are proud to show their unity by showcasing the talents and knowledge they have acquired over the past two years.  Don’t miss this opportunity for a great night out to experience a multi-coursed fine dining experience paired with exceptional wines.  There will be an assortment of delectable silent auction items presented and available for your bid.

This week the Iceman Donald Ziraldo joins WineGuyMike for week two for the final show in this series on Ice-wine.  Last week we tasted the Equifera Riesling Ice Wine and this week I’ll taste the Equifera Vidal Ice Wine with Donald.

The Equifera Ice Wine was a treat for me to taste.  Tasting wine with Donald Ziraldo was a pleasure and an education, one of my stand-out featured guests I have had the opportunity to have on my show.  In addition to last week’s following blog post I have included my review from this week’s tasting of the Equifera Vidal Ice Wine.

Ice-wine is a wine of extremes. Donald Ziraldo who produces Equifera Icewine is a man of extreme passion.  This week on the WineGuyMike radio show I had the pleasure and opportunity to talk with Donald and learn about him, his life’s body of work, and the Ice-wine he is so passionate about.

Ice wine is a form of extreme winemaking that takes the excruciating circumstances of Mother Nature to an entirely new level.  Ice-wine or “liquid gold” as it is referred to by wine aficionados is a dessert, or aperitif wine.

The practice of making Eiswein in Germany dates back to the early 1700’s.  But it is in Canada where it has become a modern day art.  Canada is now recognized as the finest Ice-wine producing area in the world.  This is mainly due to the Herculean efforts of one man, Donald Ziraldo.

Ziraldo is known as the “Godfather” of Ice-wine throughout the world.  He is also readily acknowledged as the world’s foremost authority on Ice-wine’s.  Ziraldo is the son of Italian immigrants who settled in the Canadian province of Ontario.  This is just across from Lake Ontario, one of the best known wine regions in the United States, the Finger Lakes region.

Ice-wine is a winemaking style wherein grapes are naturally frozen on the vine, harvested during the middle of the night and pressed in the extreme cold to separate the juice from the ice crystals. 

If the freeze does not come soon enough, the entire crop can be lost to rotting and if the freeze is too severe, it can prevent any juice from being extracted when the grapes are pressed.  The results produce very special wines that express aromatic flavors of white and tropical fruits such as mango, peach, and lychee.

Donald Ziraldo has a long and storied history of producing fine quality wines with winemaker Karl Kaiser.  Ziraldo and Kaiser are the forefathers of Canadian Ice-wine, together they founded Inniskillin Winery.  The Ice-wines of Inniskillin put Canadian Ice-wine of the map of the wine scene internationally.  Inniskillin produced many internationally renowned wines.

In 2006 Ziraldo and Kaiser left Inniskillin, although Kaiser remains as an emeritus consultant to Inniskillin.  Ziraldo has a new wine project in the Equifera Ice winery. 

The Equifera Ice Wines are grown and produced in Short Hills, a sub-appellation of the Niagara Peninsula.  The Equifera Estate Winery is the former home to champion race horses in the 1950’s and 60’s.

 Equifera produces Riesling, Vidal, and red Cabernet Franc Ice-wines. This week WineGuyMike had the opportunity to talk with Donald about the beautiful Equifera Ice-wines, we tasted them too.

The award winning Equifera Ice Wine is a special occasion in a glass.  When I taste great wine it occurs to me that you can taste the personality on the person behind the wine.  This is true of the Equifera Ice Wine, perhaps the best of Donald Ziraldo’s entire body of work in the world of wine.

The first wine that Donald and I tasted was the Riesling Ice-wine.  The Equifera Ice Wines strike the perfect balance of sweetness and acidity.  The Riesling is lighter in body and texture than the Equifera Vidal Ice Wine that Donald and I will taste next week on the show.  The structure and complexity of this magnificent ice-wine go hand-in-hand.  You would be hard pressed to find more complex wines in the world than the Equifera Ice Wines.  You could think of the Equifera wines as having multiple personalities as there are some many layers to them, you must try them.

Visually this Riesling ice-wine has a deep golden straw color that dances in your glass.  You are then greeted with the aroma of tropical fruit and a wonderful essence of stone fruit, and the nectar of honey.  On the mid-palate combine a wonderful tug of war between sweetness and acidity. The complexity of this wine is so deep that of the finish your palate is cleansed from the perfect acidity of the wine, but it does not end there.  The finish is an eternity of joyful bliss, just like a world class Sauterne you are left with the flavor of tart raisin.  This is one of the premier dessert or aperitif wines you will ever taste.

Week Two wine tasting:

The Equifera Vidal Ice Wine is every bit as complex as the Riesling, the Equifera Ice Wines are tantalizing.  The quality of Donald’s wines is exceptional.  The Vidal varietal is a hybrid of Trebbiano and Ugni Blanc grapes.  The Vidal varietal is hardy and more resistant to the extreme cold than the Riesling.

The Vidal that Donald and I tasted this week is fuller in body than the Riesling Ice-wine.  The nose of the Vidal is beautifully aromatic with tropical fruits of pineapple, mangos, lychee and then notes of grapefruit.  When this wine hits the palate it just explodes filling your mouth with lush texture that clings to sides of you mouth.  The Vidal, like the Riesling from Equifera is so well structured and balanced with acidity that it cleanses the palate on the finish, but not without a lingering memory of rich tropical fruit and honey. Truly incredible wines from Ziraldo.

It’s Good Friday and Easter Sunday is coming quickly.  You may be having guests for dinner or you might be a guest for Easter dinner, in any case you need a great wine to serve or share.  Here are a few wine and main entre pairing suggestions for you.  Happy Easter from WineGuyMike, from my table to yours.

L’Ecole N° 41  2010 Chenin Blanc – Columbia Valley ($10.99)

This second generation, family-owned artisan winery located in the historic Frenchtown School depicted on our label.   Founded in 1983, they are the third oldest winery in the Walla Walla Valley.  As a traditional brick and mortar winery they grow and make 100% of their wine.  The focus is on terroir-driven, distinctive, and expressive wines.  All of L’Ecole’s Walla Walla Valley wines are made from grapes which are certified sustainable.

This fresh, tart and delightfully fruity Chenin Blanc shows Asian pear, perfumed honeysuckle and orange blossom aromas with flavors of apple, apricot, and grapefruit on a crisp mineral, lightly sweet finish.

L’Ecole Nº 41 has produced this old vine, Vouvray style Chenin Blanc since 1987. Jean Ferguson, L’Ecole Nº 41’s founding winemaker, loved this wine and crafted her version of Vouvray through cold fermentation to enhance the fruity and floral esters.  This wine offers great value.

Food pairing; Ham, Cornish Hens, white variety of fish, shellfish.

Kendall-Jackson Avant Chardonnay ($14.99)

The Avant Chardonnay is a beautifully crafted wine that is a great wine to start of the evening with.  There are three things that I share with you about the entire portfolio of Kendall-Jackson wines; the wines are made with finesse, the wines are elegant, and the wines are always consistent.

The Avant Chardonnay is pale yellow in the glass; it looks refreshing in your glass as it begs to be tasted.  It was fun to taste this new wine from Kendall-Jackson against the Vintners Reserve Chardonnay that has long been one of America’s favorite wines.

The Avant has only a slight nuance of oak, the fruit is bright on the nose and the palate.  What I found intriguing about this wine is that on the palate it was both light yet rich with fruit.  This wine has a perfect balance of fruit and acid, featuring mild tropical fruit of pineapple, tart apple, and my favorite Meyer lemon, the K-J Avant will pair nicely with shellfish, or any white variety of fish.  The K-J Avant really comes to life on the mid-palate as it is crisp, and delivers light fruit with nice gentle acidity.  The finish is delightfully crisp with subtle tropical fruit that lingers long, this is a very nice wine.

Food Pairing; Roast Chicken, Cornish Game Hen, white fish varieties, Salmon, shellfish

Equifera Ice Wine ($70.00)

Food Pairings; Stilton or Rogue Creamery Blue Cheese, Baked goods, fresh fruit, Creme Brulee, it is also dessert in a glass and needs no accompaniment. 

Inniskillin Riesling Ice-wine ($70.00)

Riesling

One of the world’s greatest “noble” varieties, this cool weather grape with high acidy is a natural for the making of Icewine.  Classic Riesling qualities include elegant citrus flavors, ripe orchard fruit tones and a slight mineral edge.

Tasting Notes

This Riesling Icewine shows the elegance of tropical aromas and flavors of lemon and lime. The good acidity of Riesling allows for a refreshing mouth feel amid the many layers of flavors that unfold.

Food Pairing Suggestions

Great with lemon based desserts or tarts along with fresh fruit based desserts; rich cheeses accompanied by fresh or dried fruit or your favorite fruit compote. Delightful all on its own!

Icewine and Cheeses

The major difference between Icewine and other dessert wines is acidity.  While all dessert wines are sweet, only the best ones have balanced acidity as well.  This crucial element not only adds to the enjoyment of Icewine, but also to its natural compatibility with cheese.  Most of the cheese universe pairs brilliantly with Icewine because each cheese’s richness begs for that crucial acidity.  Cheeses are inherently savory and sometimes salty and when prepared with the honeyed sweetness of Icewine, it creates a lovely balance that makes for a perfect match.

Riesling based Icewine is renowned for its acidity and mineral notes.  Its vivid orange and citrus tones will combine with a rich range of creamy and decadent food textures and tastes, from foie gras to crème brulée.

2009 Russian River Pinot Noir ($28.99)

This dark, garnet colored Pinot Noir exhibits floral aromas of rose petals intertwined with spice components of ginger, dusty earth and a hint of vanilla. Fruit aromas of raspberry and cassis form the core of the wine, and in the mouth, create a long, delicious finish that can be tasted for several minutes.

The wine is showy with a seamless viscosity that is balanced with a healthy bit of tartness to keep the wine fresh and lively.  It’s full in the palate with fine, coco-powder like tannins and a nice dose of astringency that lend additional grip and structure to this wine.  Overall, the wine has struck the fine balance between delicate and structured, and will improve with bottle aging during the next five years (or more).

With the Russian River Valley Pinot Noir, they ferment each lot of grapes separately in three to six ton batches.  They do not add commercial yeast to the tanks and instead rely on the natural yeasts found on the grapes and throughout the winery to ferment the juice.  This process tends to increase the length of the fermentation and add an additional layer of complexity to the finished wine.  During fermentation and barrel aging, they treat the new wine as gently as possible in an effort to preserve its aroma.

Food Pairings; Leaner beef roasts, ham, pork roasts, Salmon, roasted chicken, Lamb dishes.

Kendall-Jackson Grand Reserve Merlot ($25.99)

All the wines that go into the Kendall-Jackson Bordeaux portfolio are treated with care and attention to detail; however, with Grand Reserve level fruit, they employ additional artisan techniques like hand sorting, small-batch fermentation and additional cold-soaking to coax the finest expression out of our fruit.

The wines are selected based on the potential they showed in the vineyard and during the final stages before draining off the skins. The wines are barrel-aged in French oak, usually seeing 35-40% new oak.  When the final selections are made the wines from each individual barrel are tasted to make sure it belongs in the blend. The result are fabulous Grand Reserve wines.

The Grand Reserve Merlot is rich with dark fruits of black plum, boysenberry and cherry.  The nose of this wine is beautifully subtle with notes of violet and rich dark fruit.  Silky tannins and nice firm structure greet your palate and the great balance of this wine makes it a superb food friendly wine. The palate delivers dark plum and berries followed with nice cherry.  The finish is an ever so subtle chocolate and cedar followed with a sense of light cleansing mineral, a real delight.

Food Pairings; Grilled meats, Beef roasts, Ham

2009 Viña Cobos Felino Cabernet Sauvignon ($19.99)

Paul Hobbs has always been committed to crafting unfiltered and unfined wines and utilizing native yeasts in the fermenting process.  His commitment to winemaking technique results in exceptional wines that are well structured. Paul’s wines are a product of classic old world technique.

The Felino wines express great balance of pure, concentrated fruit that is lively with acidity and smooth, fine, tannins.  The Viña Cobos Felino label offers Cabernet Sauvignon, Malbec and Chardonnay that is vibrant, lush, mouth-filling wine with beautiful texture that pairs exceptionally well with food.  Did I mention these wines sell for under $16.00.  These wines offer incredible value as many of Paul’s California wine offerings are far north of $100.00.

The 2009 Viña Cobos Felino Cabernet Sauvignon is 88% cabernet sauvignon, 8 % syrah, 4% petit verdot.  The grapes get a 3 to 4 day cold soak; 15 to 18 days total maceration and are fermented with selected and native yeasts.  This wine receives second native malolactic fermentation in barrel for 5 months and is then aged 9 months in American and French oak barrels, 20% of these are new oak.

This is a big wine, 14.5% alcohol, yet very refined in a way that it has not been over manipulated.  A deep ruby hue paves the way for a nose that is ripe with aromas of saddle leather, subtle sweet tobacco, minerality, and earthiness. The palate is lush with a rich well rounded mouth-feel that is complex.  There is a great balance of dark fruit, black currant and boysenberry, mineral, sweet tobacco, and acid. This wine is both rich yet remains lively and well structured with perfect tannin.

Food Pairings; Lamb dishes, Beef Roasts(especially heavier marbled roasts), Prime Rib would be an exceptional pairing.

Ice-wine is a wine of extremes. Donald Ziraldo who produces Equifera Icewine is a man of extreme passion.  This week on the WineGuyMike radio show I had the pleasure and opportunity to with Donald and learn about him, his life’s body of work, and the Ice-wine he is so passionate about.

Ice wine is a form of extreme winemaking that takes the excruciating circumstances of Mother Nature to an entirely new level.  Ice-wine or “liquid gold” as it is referred to by wine aficionados is a dessert, or aperitif wine.

The practice of making Eiswein in Germany dates back to the early 1700’s.  But it is in Canada where it has become a modern day art.  Canada is now recognized as the finest Ice-wine producing area in the world.  This is mainly due to the Herculean efforts of one man, Donald Ziraldo.

Ziraldo is known as the “Godfather” of Ice-wine throughout the world.  He is also readily acknowledged as the world’s foremost authority on Ice-wine’s.  Ziraldo is the son of Italian immigrants who settled in the Canadian province of Ontario.  This is just across from Lake Ontario, one of the best known wine regions in the United States, the Finger Lakes region.

Ice-wine is a winemaking style wherein grapes are naturally frozen on the vine, harvested during the middle of the night and pressed in the extreme cold to separate the juice from the ice crystals. 

If the freeze does not come soon enough, the entire crop can be lost to rotting and if the freeze is too severe, it can prevent any juice from being extracted when the grapes are pressed.  The results produce very special wines that express aromatic flavors of white and tropical fruits such as mango, peach, and lychee.

Donald Ziraldo has a long and storied history of producing fine quality wines with winemaker Karl Kaiser.  Ziraldo and Kaiser are the forefathers of Canadian Ice-wine, together they founded Inniskillin Winery.  The Ice-wines of Inniskillin put Canadian Ice-wine of the map of the wine scene internationally.  Inniskillin produced many internationally renowned wines.

In 2006 Ziraldo and Kaiser left Inniskillin, although Kaiser remains as an emeritus consultant to Inniskillin.  Ziraldo has a new wine project in the Equifera Ice winery. 

The Equifera Ice Wines are grown and produced in Short Hills, a sub-appellation of the Niagara Peninsula.  The Equifera Estate Winery is the former home to champion race horses in the 1950’s and 60’s.

 Equifera produces Riesling, Vidal, and red Cabernet Franc Ice-wines. This week WineGuyMike had the opportunity to talk with Donald about the beautiful Equifera Ice-wines, we tasted them too.

The award winning Equifera Ice Wine is a special occasion in a glass.  When I taste great wine it occurs to me that you can taste the personality on the person behind the wine.  This is true of the Equifera Ice Wine, perhaps the best of Donald Ziraldo’s entire body of work in the world of wine.

The first wine that Donald and I tasted was the Riesling Ice-wine.  The Equifera Ice Wines strike the perfect balance of sweetness and acidity.  The Riesling is lighter in body and texture than the Equifera Vidal Ice Wine that Donald and I will taste next week on the show.  The structure and complexity of this magnificent ice-wine go hand-in-hand.  You would be hard pressed to find more complex wines in the world than the Equifera Ice Wines.  You could think of the Equifera wines as having multiple personalities as there are some many layers to them, you must try them.

Visually this Riesling ice-wine has a deep golden straw color that dances in your glass.  You are then greeted with the aroma of tropical fruit and a wonderful essence of stone fruit, and the nectar of honey.  On the mid-palate combine a wonderful tug of war between sweetness and acidity. The complexity of this wine is so deep that of the finish your palate is cleansed from the perfect acidity of the wine, but it does not end there.  The finish is an eternity of joyful bliss, just like a world class Sauterne you are left with the flavor of tart raisin.  This is one of the premier dessert or aperitif wines you will ever taste.

Jess Jackson loved farming, this began for him as a child on his Grandfathers ranch in Colorado where he realized that a handful of dirt had a deep meaning for him.  This was especially true in Sonoma County, Jess’ favorite place in the world.  His intimate relationship with the land that he loved and grew grapes provided him a sixth sense for the terroir, or sense of place of this area. 

As a grape farmer Jess was one of the first to recognize and understand that vines are like mountain goats, in that they thrive on mountain tops, ridges, hillsides and benchlands.  This farming method is difficult but Jess knew growing grapes this way would produce the richest fruit exhibiting intense character and flavor. 

This week’s show wraps up a one month series on the WineGuymike radio show with Jackson family Wines and Kendall-Jackson.  The first week we had a conversation with, VP of Communications Jason Hunke, and he provided the audience with a rich overview of Jackson Family wines and Kendall-Jackson.

The last three weeks I have tasted a variety of wines from the Kendall-Jackson portfolio with KJ Winemaster Randy Ullom.  This week I welcomed Randy back for what is our last tasting and the grand finale of this one month series. During this month I have had the distinct privilege to become intimately acquainted with Kendall-Jackson and Jackson Family Wines.

This week Randy and I tasted two beautiful wines from the KJ portfolio, the Grand Reserve Cabernet Sauvignon and Grand Reserve Merlot.  Kendall-Jackson has always been dedicated to three things: respect for the land, their wines and the best interests of the consumer.  Both of the Grand Reserve wines Randy and I tasted this week exemplify the three key points that Jess Jackson founded the Kendall-Jackson winery on.

Both the Cabernet and Merlot were perfect examples of just how different wines grown and produced in Sonoma and the Napa Valley are.  As I was thinking of a comparison that someone could relate to it occurred to me that the difference really was about mouthfeel.  Comparing wines from Sonoma and Napa is like wearing silk or corduroy; they are both soft and comfortable yet have a very different texture.  This holds true of the palate, Sonoma wines are full of finesse and elegance while wines from Napa are weightier, bolder, and present the palate with prominent texture.

Both appellations are outstanding, just different.  The Kendall-Jackson Grand Reserve wines Randy and I taste today are both fantastic examples of premier wine from Sonoma County.  

Winemaster Randy Ullom  oversees the entire Kendall-Jackson portfolio of wines while and Winemaker Matt Smith is responsible for the Bordeaux varietals, Cabernet Sauvignon, Merlot, and the Meritage or red blends.

The KJ Grand Reserve Cabernet Sauvignon is a mountain Cab that is sourced primarily from the Estate vineyards in Sonoma County, the majority of which are grown at over 1100 feet.

All the wines that go into the Kendall-Jackson Bordeaux portfolio are treated with care and attention to detail; however, with Grand Reserve level fruit, they employ additional artisan techniques like hand sorting, small-batch fermentation and additional cold-soaking to coax the finest expression out of our fruit.

The wines are selected based on the potential they showed in the vineyard and during the final stages before draining off the skins. The wines are barrel-aged in French oak, usually seeing 35-40% new oak.  When the final selections are made the wines from each individual barrel are tasted to make sure it belongs in the blend. The result are fabulous Grand Reserve wines.

The Grand Reserve Cabernet has dense, bold tannins and ripe blackberry, blueberry, black cherry fruit and a hint of cassis.  On the nose the aroma of mocha and nutmeg adorns your glass. The finish is earthy with smoke, cedar, and notes of tobacco, a very nice touch that stays with the palate.

This wine is elegant and focused, typical of great KJ Sonoma County Cabernet.  The fruit from Sonoma County mountain, ridge and hillsides presents black plum, cherry, currant and chocolate flavors while fruit from the Napa County mountain and benchland vineyards complement the palate with boysenberry, cedar and violet notes.

The Grand Reserve Merlot is rich with dark fruits of black plum, boysenberry and cherry.  The nose of this wine is beautifully subtle with notes of violet and rich dark fruit.  Silky tannins and nice firm structure greet your palate and the great balance of this wine makes it a superb food friendly wine. The palate delivers dark plum and berries followed with nice cherry.  The finish is an ever so subtle chocolate and cedar followed with a sense of light cleansing mineral, a real delight.

Jess Jackson grew up in the San Francisco Bay Area during the Great Depression and worked as a policeman, farmer, and even became an attorney whose focus was on land-use.  In 1974 he purchased an 80-acre pear and walnut farm, and so began the Kendall-Jackson Winery.  It was Jess’ desire to get back to the land and farming so that he could move away from practicing law. He also knew that agriculture was a better way of life for his family.

By the early 1980’s the orchard had been converted into a winery and the vineyard was producing grapes that were being sold to supply other wineries. In 1980 there was a bumper crop that resulted in a large order for grapes that was cancelled, which became the first vintage of Kendall-Jackson Vintner’s Reserve. 

Every entrepreneur experiences a defining moment and for Jess Jackson and the winery this was that moment, as the 1982 vintage of Vintner’s Reserve Chardonnay became America’s favorite Chardonnay. The 1983 vintage was recognized by winning the first Double Platinum Award ever presented by the American Wine Competition, and has received yearly accolades ever since.

This week on the WineGuyMike radio show I was joined once again by Kendall-Jackson Winemaster Randy Ullom for our second week of tasting. The crown jewel of Jackson Family Wines and Kendall-Jackson is the Vintners Reserve Chardonnay, after all this is where it all began.  Last week we tasted the Avant Chardonnay which was excellent, refreshing, and a style favored today by many Chardonnay lovers.  Randy and I sat down and tasted the Vintners Reserve Riesling and Chardonnay this week on the show.

For those of you just tuning in this week Randy Ullom is Winemaster for Kendall-Jackson.  Randy has been with Kendall-Jackson since 1992 as a winemaker, in 1997 he was made head Winemaster by Jess Jackson.  His job is to oversee the entire KJ wine portfolio, a job he does very well.

My take away after tasting wine with Randy last week was the fact that the Kendall-Jackson wines are made with finesse, the wines are elegant, and the wines are always consistent.  I found this to be true once again this week as we tasted the Vintners Reserve Riesling and Chardonnay.  The Avant Chardonnay was outstanding and here is a recap of what my experience was with this new style of Chardonnay from KJ.   

The Avant has only a slight nuance of oak, the fruit is bright on the nose and the palate.  What I found intriguing about this wine is that on the palate it was both light and rich in fruit.  This wine has a perfect balance of fruit and acid, featuring mild tropical fruit of pineapple, tart apple, and my favorite Meyer lemon, the K-J Avant will pair nicely with shellfish, or any white variety of fish.  The K-J Avant really comes to life on the mid-palate as it is crisp, and delivers light fruit and acid.  The finish is delightfully crisp with subtle tropical fruit that lingers long, this is a very nice wine.

The Vintners Reserve Chardonnay has long been known as America’s Chardonnay after being recognized by winning the first Double Platinum Award ever presented by the American Wine Competition.

The Vintners Reserve Chardonnay has been the best selling Chardonnay in America for the last 20 years running, that’s a pretty strong indication from consumers how they feel about this wine that Randy and I tasted this week.

The KJ Chardonnay has beautiful golden color in the glass with visually perfect viscosity.  On the nose you are greeted with layers of crisp tropical fruits from the cool coastal vineyards, all from the Jackson Estate vineyards.  Chardonnay lovers will enjoy citrus and tropical pineapple, mango, and papaya complemented by a supporting role of perfect toastiness and slight vanilla.  The Chardonnay has velvety texture with a creamy flavor on the palate.  This wine is superb and is extremely food friendly due to the perfect fruit to acid balance.  The finish is lush and long, you must have another sip…    

The Vintners Reserve Riesling is crisp, refreshing, lush, and ripe.  Subtlety sweet and delightfully crisp with acidity this wine cleanses the palate with each and every sip.  Both floral and fruity with a hint of orange blossom and jasmine from the ever so slight supporting role of the Gewurztraminer, and don’t miss the hint of spice.  

This is a great Riesling that is nearly dry, very refreshing with study balance.  Beautiful aromatics and lush on the palate.  Rieslings pair well with spicy or Asian dishes but today I’m pairing this with a very simple dish that is a perennial favorite of mine.  The main entre is slightly salty and that is why this wine is a perfect accompaniment to this dish.

Double Stuffed Chops

Stove top stuffing

Preparation; preheat oven to 325°

Slice chops down the center on the meat side to open a pocket for stuffing.

Prepare stove top stuffing and insert into each of the pork chops, be generous.

Salt and pepper chops and lay in shallow baking dish and place on center rack of oven and cook for an 1 hour 15 minutes to 1:30.

Side Dishes

Brocoli steamed until done but still crisp. Melt a little butter and the juice of a slice of lemon. Pour over broccoli and serve on the plate with the chop.

Applesauce as your second side dish.

This is a perfect easy and inexpensive meal, take a bite of the chop followed by a sip of the Vintners Reserve Riesling and the rest is palatial history.  This is a perfect pairing Kendall-Jackson style.

Good Sunday morning and welcome to the WineGuyMike™ Radio Show© This week on the show I decided to discuss Dessert and Aperitifwines as a prelude to a special guest that will be joining me on the show in the coming weeks.  Donald Ziraldo ,co-founder of Inniskillin Wines Inc., Niagara-on-the-Lake, Ontario and current President of Inniskillin Okanagan Vineyards Inc., Oliver, British Columbia, the world authority on Icewine. 

Stay tuned for this show it’s one you will not want to miss.  A friend of mine recently was asking about Dessert and Aperitif wines so I thought this would be an appropriate time to explore this area of wines that many are just not sure about.

My friend Aimee Ryan asked me; Mike I like to drink dry or crisp wines but I never seem to like aperitif or dessert wines.  Can you recommend how I might approach these types of wines?  Aimee thanks for asking, let’s take a moment to understand these wines types and styles a little bit better.

There are some naturally sweet grape varietals such as Muscat, Huxelrebe, and Ortega that are used to produce sweet wines.  The Sweetness of these particular varietals is enhanced by pruning techniques – eliminating bunches of grapes on the vines to concentrate sugar and flavor.

There are a few techniques that are used to produce sweet wines as well.  One winemaking technique that is used is Chaptalization.  This is when sugar or honey is added prior to fermentation process.  Süssreserve is a German technique of winemaking that adds grape juice to the wine after fermentation has been completed.

Today though we will be focusing on Icewine, a winemaking style where grapes are naturally frozen on the vine, harvested during the middle of the night or early morning and pressed in the extreme cold to separate the juice from the ice crystals.  The fermentation requires special yeast and many months of time.  This remarkable process concentrates the sugar and acids and intensifies the aroma and flavor of the grapes.  The result is very special wine that expresses aromatic flavors of white and tropical fruits.

Natural Icewine by wine regulations require a hard freeze; in Canada the temperature must drop to (-8C or 17°F) colder, and in Germany (−7 °C or 19 °F), this usually occurs months after a typical harvest.  If the freeze does not come soon enough the entire crop can be lost to rot and if the freeze is too severe it can prevent any juice from being extracted when the grapes are pressed.  Animals also love these sweet grapes and left to hang to long grapes will naturally drop from the vine.  This is a very tenuous circumstance waiting for the “perfect” climatic conditions.  Canada and Germany are the world’s largest producers of ice wines.  About 75 percent of ice wine in Canada comes from Ontario.

Late Harvest or Noble Rot wine is made from moldy grapes, a fungus known as Botrytis Cinerea.  This process occurs best in vineyards that experience heavy evening moisture with hot sunny days.  This fungus dehydrates the water from the grape and imparts nuances of Honey, and Apricot once the wines are made.  Sauternes from Bordeaux, Hungarian Tokaji, or  Germany’s Trockenbeerenauslese are some of the world’s finest examples of Late Harvest and Noble Rot wines.

In Austria, Germany, the United States, and Canada, the grapes must freeze naturally to be called ice wine.  Cryoextraction is yet another method (that is, mechanical freezing) used to simulate the effect of a frost.  The grapes are not left to hang for extended periods as is done with natural ice wines.  These non-traditional wines are sometimes referred to as “icebox wines”. 

Good Dessert and Aperitif wines are sweet but remain balanced due to balanced acidity.  These wines can be served alone or with foods less sweet than the wine.  Quite often, the wine itself can be a dessert, but bakery sweets can be a good pairing.

Whites Dessert or Aperitif wines should be served slightly chilled while the red wines should be served at room temperature or ever so slightly chilled.

A sweet or dessert wine that I really enjoy and recommend is the 2010 Deglace Dessert Wine from Adelsheim Vineyard.  This is a beautiful example of a very sophisticated dessert wine made in the Cryoextraction method.

Dessert wines from red-skinned grapes – especially Pinot noir – are relatively rare in the world.  Adelsheim Vineyard produced their first Deglacé, almost as an experiment, in 2001.  Initially, the wine was created for use at the end of winery dinners.  Neither of the two ways in which dessert wine is traditionally produced – using grapes that have been desiccated by Botrytis Cinerea (“noble rot”), or pressing after the grapes had frozen on the vine – would work for us.  A Pinot noir producer would never want Botrytis in its vineyards (it ruins red wines), and they couldn’t remember a fall when a freeze came before the rains of winter.  That year, winemaker Dave Paige selected one block of grapes to take to a freezer instead of the winery, and then followed the traditional approach to producing an ice wine. (Well, not entirely traditional.  He didn’t have to do any of the work in the middle of the night which is when grapes for Ice Wine are traditionally harvested.)  Their Deglacé dessert wine has a soft pink color produced from contact with the Pinot noir skins.  The residual sugars are on the low end as compared to traditional ice wines, resulting in a consistently balanced wine.

The Wine

Even with this sweet wine, they have stayed true to their winery philosophy that a wine’s highest use is in pairing with meals.  That means retaining enough of the grapes’ natural acidity to ensure that the wine never becomes too cloying.  The Deglacé has amazing strawberry shortcake, citrus blossom, and nectarine aromas that meld with the viscous yet firm texture on the palate.  It should prove to be a perfect match with red berry tarts, pumpkin cheesecake, and a wide range of other desserts.

A preview to Superbowl Sunday appetizers and wines that make them score the touchdown, welcome to the WineGuyMike™ Radio Show© this Sunday morning.  Today I have chosen a number of wines that are affordable, most are $10.00 to $16.00.  These selections are very good wines that will match up, (football lingo), well with a few of my favorite football appetizers.

Next week’s Superbowl XLVI television audience will approach 110 million viewers but the the first Superbowl championship was contended in 1967.

Bowl games are not new to football, but the Super Bowl took the concept and elevated the idea to an entirely new level.  This was a way for the champions of the two existing football leagues at the time, the National Football League (NFL) and the American Football League (AFL), and decide who was the best team.  The first Superbowl was born.

Superbowl I took place on January 15, 1967 at Los Angeles Memorial Coliseum.  This game determined the champion of the 1966 football season.  There were nearly 62,000 fans in the stadium to see Vince Lombardi’s Green Bay Packers school the Kansas City Chiefs in a painful lesson about who was top dog, the final score was 35-10.  Millions of viewers witnessed this cool new Superbowl game on TV.  Superbowl Sunday 110 million people will watch the extravaganza this event has morphed into.

Where there is a Superbowl, there is a celebration and that means food and drinks.  I’m not talking about Beer and Soda, but they’re great too.  On today’s show I want to share some of my favorite Superbowl Sunday snacks, treats, and appetizers and what wine I’m going to matching up(that’s football terminology, so I’ll use that today rather than pairing, or wine terminology).

Superbowl Sunday is a fun day to enjoy but you really need to pace yourself.  Otherwise you can’t begin to enjoy this event throughout the entire day.  I’ll be posting a few recipes up on my blog at www.wineguymike.wordpress.com for you to use along with my Suberbowl wine recommendations.

I normally write about healthy eats but the following appetizers are real party pleasers.  These apps are so good with the wines I’ve paired them with you, your friends and family will love them.  Disclaimer; I’ll be omitting the nutritional information for the following recipes. 

Tim’s Cascade potato chips with blue cheese and bacon, we’ll call this recipe the “Triple Threat”

Servings; 1 if you’re a glutton, 6-8 if you share

Recipe Ingredients; One baking sheet, 1 large bag of Tim’s Cascade (plain) potato chips, and two wedges of inexpensive Blue Cheese.  Side note; if you really want to take it up a notch with this appetizer use 4-5 strips of pre-cooked bacon chopped into small pieces

Preparation:

Pre-heat heat broiler on low or if you only have one setting on your broiler lower the rack in the oven so it’s not to close to the broiler.  Remember we’re just melting cheese

Take a baking sheet and cover with foil

Spread chips out over the baking sheet, let them overlap one another

Take one wedge of the Blue Cheese and with a knife slice through the cheese until it’s crumbled into small to medium size chunks.  The second wedge is for the second batch of this appetizer, because you’ll just need more.

Distribute the Blue Cheese over the top of the chips and place the baking sheet of chips in the oven.  If you are adventurous feel like living large distribute the bacon over the blue cheese and chips before placing your appetizer sheet in the oven.

Watch the cheese and let it melt, usually around 3-5 minutes, then pull they sheet of chips out of the oven.  The Blue Cheese should be melted but not to the point of running off the chips.

 Velveeta Queso Dip with tortilla chips, okay this dip is just downright addictive.  That’s why you make an entire crockpot full of this gooey crowd pleaser.

Ingredients

1 lb. (16 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes

1 whole jar of Pace Picante Sauce, I prefer the hot Picante Sauce

1 lb. of lean ground beef that has been browned and drained

Optional for a spicier dip; Tabasco or a hot sauce to taste(consider your guests)

Directions

Combine Velveeta and Pace Picante Sauce in a crockpot and melt cheese.  When cheese is melted add browned ground beef and a little Tabasco or hot sauce and combine.

Serve

In a bowl as a dip or pour over your favorite tortilla chips.  This dip is delicious.

Wines to pair with these first two appetizers:

Wallace Brook 2009 Pinot Noir ($15.99)

Good Pinot Noir is hard to find at this price point but this wine is made by one of my favorite Willamette Valley wineries, Adelsheim Vineyard.  This Pinot Noir offers a complex nose of red fruits and vanilla.  The supple mouth feel layers raspberry and red cherry fruit, and is complemented by balanced oak and well-integrated tannins.

2009 Balletto Pinot Gris ($13.99)

This Pinot Gris is a complex, pale, straw-colored wine that opens with musky and exotic fresh fig and floral honey tones.  The secondary aromas reveal ripe red apple, melon and lemon. The aromas are ever-changing and intoxicating, and on the palate this wine is lush and perfectly viscous with a dose of tartness that balances and holds the wine together.

Tuck Beckstoffer’s 75 Sauvignon Blanc ($11.00)

This wine presents as a classic Graves-style Sauvignon Blanc.  The light straw color is reminiscent of classic left-bank Bordeaux Blanc, while the flavors are a perfect blend of old-world complexity and crisp North Coast fruit.  The nose is just right on this gem, neither to fruity or grassy, but a nice aromatic of grass and grapefruit. On the palate this wine offers bright fruit flavors of apple skin and pear balanced by undertones of cherimoya, fig and melon.

Little Smokies, now I have a special way I like to prepare these delectable little pork parts in a tube.  First you open the package and find a big sauté pan that will hold 2-3 packages of the smokies.  Take two bottles of dark beer and turn up the heat just high enough for a low boil to cook off the alcohol.  Drain the pan and dump them into a crock pot with a fresh bottle of dark beer, add two bottles of your favorite barbeque sauce and a few shots of Tabasco sauce.  Cover them up, start them on high to bring all that goodness together in the crock pot, stirring occasionally, and then turn the heat down enough to keep heat consistent. Yikes these things are just redneck delicious.

Lucien Albrecht Reserve Riesling

A beautiful French Riesling from the Alsace region of France.  This wine has a lovely nose that offers up both minerality and nice floral notes.  In the mouth this wine is both elegant and robust.  It has such great structure and being an Alsatian Riesling is beautifully dry and crisp.

2008 Balletto Gewurztraminer

The aroma of Lychee fruit, guava, red pear and granny smith apple aromas are ever present in this wine. Bright fruit and citrus flavors highlight the dominate aromas of this beautiful Gewurztraminer.  Once in your mouth tropical flavors from the nose translate to the palate and are accompanied by subtle tangerine and lemon.

The wine is lushly textured and light, balanced tannins and a delightful finish of toffee, lingering apple, and pear make this a perfect wine to compliment your thanksgiving turkey and all of the lovely side dishes.

2010 Hugel Gentil

The Hugel Gentil revives an ancient Alsace tradition that wines produced from a blend of noble varietals were called “Gentil”.

Hugel Gentil is a traditional Alsace blend of primarily Gewurztraminer paired with varying amounts of Pinot Gris, Riesling, Muscat and Sylvaner.

The Gentil blend of Noble grapes from Alsace region display a light youthful color in the glass and is ripe with floral, fruit and notes of spice.  This wine is rich, yet dry with a hint of lemon zest and mineral is the perfect complement for your dinner.  This is an outstanding Thanksgiving wine selection.

Burgers, I have you covered here.  I have recipes from Chef Bob Waggoner, host of PBS’ Ucook with Chef Bob.  Chef Bob was a guest on the show and I have the recipes he matched up, there is that football lingo again, with Beaujolais.  I’m making a few other wine suggestions for you to enjoy with these delicious burgers.

RECIPE #1- ANGUS BURGERS (For 2 people)

 INGREDIENTS:

· 2 regular sesame buns

· Angus ground beef – 160z

· Red heirloom tomato – 4 slices

· Vidalia onion – 4 slices

·Smoked bacon – 4 slices – diced finely

· Fresh rosemary -1 tablespoon

· Peeled shallots – 3 diced thinly

· Butter lettuce – half of a small head

· Salt

· Fresh ground white pepper to taste

· Aged white cheddar cheese – 2 oz diced into small cubes

DIRECTIONS:

In a small sauté pan cook the bacon until crisp.  Add the shallots and cook for 3 more minutes on low temperature.  Add the chopped rosemary and cook for another 30 seconds.  Remove from pan and let sit at room temperature.

Form 4 thin patties of beef approximately 4 oz each.  Then place bacon, shallot and rosemary mix on top of 2 of the patties.  Add diced cheddar, salt and fresh ground pepper.  Cover with other patty.  Pinch the sides together to form one big burger.  Salt and pepper the top of the patty.  Preheat grill and grill burgers.  When the burgers are almost done, lightly grill the bun.  On the bottom bun place the burger, Vidalia onion rings, tomato rounds and lettuce.  If you like you may add mustard, mayo or ketchup.  Top with other bun.

RECIPE #2 – GRILLED PORTABELLA (BURGER) (For 2 people)

 INGREDIENTS:

· 2 large portabella mushrooms – Stems removed and gills scraped

· Fresh thyme – 2 tsp

· Green onions – 4 each

· Yellow tomato – 4 slices

· Large eggplant – 4 round slices

· 2 Kaiser Rolls

· “Beaujolais Wine” – 4 tbsp

· Olive oil – 4 tbsp

· Salt

· Fresh ground white pepper to taste

DIRECTIONS:

Gently drizzle the olive oil over the sliced tomatoes, eggplant and green onions. Salt and pepper all.  Gently grill and set aside -1 1/ 2 minutes on each side. Salt and pepper portabella mushroom.  With a small paring knife make checkerboard cuts going halfway into the mushroom.  Drizzle 2 tbsp each of “GDwine” onto each mushroom and let it seep in for 2 min.  Add a tiny bit of olive oil on the mushrooms and grill for 2 1/ 2 minutes on each side.  Once pulled from grill sprinkle with fresh thyme.  Gently grill Kaiser Roll.  Stack portabella mushroom, tomato, green onions and eggplant on the Kaiser Roll.

RECIPE #3-TURKEY BURGER SLIDERS with SUNDRIED TOMATO&BASIL (For 2people)

INGREDIENTS:

· Ground turkey meat with 15% fat -1/2 pound

· Sundried tomato – 2 oz

· Shallots 3 each – sliced thinly

·Medium sized garlic cloves -3 each – sliced thinly

· Fresh basil- 8 large leaves – roughly chopped

· Olive oil – 2 tbsp

· Water – 11/ 2 cups

· Baby arugula – 1/2 cup

· Red onion – 4 slices

·1 ripe avocado

· Mini pita pockets – 4 – split in half

· Salt

· Fresh ground white pepper to taste

DIRECTIONS:

In a 10 inch saute pan, heat the 2 tbsp of olive oil over medium heat.  Add the sliced shallots and cook for 1minute.  Add the sliced garlic and cook for another minute.   Add the sundried tomato.  Add 1tsp of salt, 3 cranks of fresh ground white pepper and 11/ 2 cups of water and let simmer until all water is evaporated.  Add chopped basil, remove from pan and set aside.  Leave at room temperature.  Form 4 small patties using 1/2 pound of turkey meat.  Salt and pepper both sides.  Gently grill for 11/ 2 – 2 minutes per side, depending on temperature of your grill.  Grill the red onion slices at the same time. Just before the burgers are done, lightly grill the pita pocket that you have split in half. When the burger is cooked, place a small amount of arugula in the bottom of the pita.  Top with a turkey patty and arrange your slider with the grilled red onions and the sundried tomato basil mixture.

The Georges Duboeuf Beaujolais-Villages 2009 is so well made, wonderful tannin, this wine is lush and full of its beautiful berry self.  It is a wonderfully balanced wine that will be so food friendly due to its fruit and acid companionship.  It doesn’t stop there though this wine for me delivers a great little nuance of toast and butter too.  It’s like a great mildly toasted piece of bread with homemade raspberry and cherry jam; yes it’s a really great wine to complement the burger recipes.

The 2009 Brouilly has nice dark fruit, plum, and black cherry.  The palate displays silk like tannin, it’s chewy with a little tobacco, yet the texture of this confident wine is like that of  the very finest velvet.  This is a beautiful wine that those of us who enjoy a slightly fuller body to our wines will absolutely love, enjoy, and crave more.

2010 Balletto Russian River Valley Pinot Noir

This dark, garnet-colored Pinot Noir is floral with aromas of rose petals, spice, ginger, cassis and fruit aromas of raspberry.  There is a bit of dusty earth with just hint of vanilla too. This wine is showy with a seamless viscosity that is balanced with a healthy bit of tartness to keep the wine fresh and lively. It’s full in the palate with fine, coco-powder-like tannins.  A long beautiful finish.

Paul Hobbs has always been committed to crafting unfiltered and unfined wines and utilizing native yeasts in the fermenting process.  His commitment to winemaking technique results in exceptional wines that are well structured. Paul’s wines are a product of classic old world technique.

The Felino wines express great balance of pure, concentrated fruit that is lively with acidity and smooth, fine, tannins.  The Viña Cobos Felino label offers Cabernet Sauvignon, Malbec and Chardonnay that is vibrant, lush, mouth-filling wine with beautiful texture that pairs exceptionally well with food.  Did I mention these wines sell for under $16.00.  These wines offer incredible value as many of Paul’s California wine offerings are far north of $100.00.

The 2009 Viña Cobos Felino Cabernet Sauvignon is 88% cabernet sauvignon, 8 % syrah, 4% petit verdot.  A deep ruby hue paves the way for a nose that is ripe with aromas of saddle leather, subtle sweet tobacco, minerality, and earthiness. The palate is lush with a rich well rounded mouth-feel that is complex.  There is a great balance of dark fruit, black currant and boysenberry, mineral, sweet tobacco, and acid. This wine is both rich yet remains lively and well structured with perfect tannin.

2009 Felino Viña Cobos Malbec ($16.99)

Visually this 2009 Malbec presents a beautiful crimson color in the glass.  The nose of this South American beauty is ripe with red raspberry, anise, with a slight nuance of cocoa, a wonderful aroma.  The palate delivers a rich spicy mouth-feel that reveals fruit, a hint of caramel and mineral.  This malbec has a nice round balance with sturdy structure.  This wine is supple, smooth with refined tannin that makes this a great wine to drink and pair with food.  A long finish from this wine that you don’t want to end.

Cannonau di Sardegna D.O.C. Riserva (Under $11.22)

This wine is Old World and rustic in nature.  The Cannonau is native to Sardinia and is unique in aroma and on the palate.  I don’t recommend drinking this wine without a food accompaniment.  With food this will be one of the best food wines you will ever taste.  I recommend this a prime rib, roast beef, stew, and heavy appetizers.  An amazing food wine.

Bright ruby color, with purple hues, the aromas project ripe red berry, including strawberry and raspberry jam. In the mouth, coffee, spices and herbs, including an aroma of violets, plummy fruit flavours and aristocratic oak overtone. Full, round, fruit forward, consumer friendly taste profile. Oak aged for two years in large Slavonian casks with several additional months in the bottle.

Le Clos ($11.99)

A terrific companion to accompany a big juicy burger.  The wine blend is comprised of 45% Merlot, 20% Carignan, 20% Grenache, and 15% Cabernet Sauvignon.

It is unique in that it has a slight, refined oak character, highlighting a sturdy base of red fruit and oriental spices. Bringing into play terroir and savoir-faire, tradition and exotic flair, Le Clos seems to be like something out of “The Arabian Nights.”

This wine displays an attractive raspberry red color with hints of garnet.  Its nose is lively and complex, with notes of red and black fruits.  Refined oak fragrance(very subtle) with hints of incense, spices (nutmeg, clove, ginger), anise, autumn woods and tobacco.  Le Clos is very soft on the palate, with a fresh, tangy acidity, and delivers wonderful balance.  It is well-structured yet elegant, with fine tannins.

My Superbowl game prediction; Giants 21-Patriots 17, but I’m hoping I’m wrong.  I’m rooting for the Patriots, Tom Brady is still the best quarterback in football because he’s smart and he’s experienced.

Paula Ramage and her husband Allistar Ward have traveled extensively and lived abroad in different places throughout the world but home for them is the Central Otago wine region on the South Island of New Zealand.  This is the southernmost grape growing region in the world, but they produce very good wine.  Paula grew up in Alexandra and the Ward family farmed for many years on Malaghan’s Road, near Arrowtown.  Last week’s blog provided an overview of New Zealand as a wine country; http://wp.me/pFhHw-Ao  This is a land that is breathtakingly beautiful and produces some of the finest single varietal wines available. 

Paula Ramage has had at least 5 careers that she can recall but in spending time with her on the WineGuyMike™ Radio Show© this week I’ll forevermore think of her as Ambassador of New Zealand and the New Zealand wine industry.  Needless to say she is a terrific spokesperson and extremely knowledgeable about her country and the wine industry in New Zealand and throughout the world.  Paula handles all of Waitiri Creek’s administrative business and development of offshore markets, a natural for a “reformed barrister”.  She has a lovely Kiwi accent that you cannot help loving too.

Allistar Ward is a merchant banking consultant full time, although he makes time to focus on vineyard development and as Paula puts it, “he juggles all the balls and keep them in the air”.

Jason Thomson is their very accomplished viticulturist along with his team Mark Naismith and Scott Culpan who run the day to day operations.  Interestingly the Waitiri Creek winemaker is a woman, Jen, from the Willamette Valley of Oregon.  As I mentioned last week many winemakers are now traveling winemakers who work in the Northern Hemisphere during its summer months and the Southern Hemisphere during their summer.  With the Willamette and Central Otago sharing similar latitudes with a focus on cool weather grape varietals it is a natural for winemakers like Jen.

In 1993 Paula and Allistar purchased their first vineyard the Shanagolden Block in Gibbston and planted Chardonnay in 1994.   The northerly facing block was ideal for sustainable viticulture and the lower half of this area provided a perfect location for the future wine tasting venue.

The Shanagolden Block was originally settled in 1867 by James Leslie, a Scot who had emigrated to New Zealand at the age of 17.  He and his partner, Thomas Kinross followed the Dunstan gold rush.  Kinross established the Gibbston store and Post Office and James Leslie was the butcher and baker but also continued to prospect for gold.

The vineyard has a micro-climate that produces ripe fruit earlier than most in the general area.  The soil composition is made up of glacial deposits and free draining alluvial soil matter (scheist).  This terrior is well suited to the cool weather grape varietals that Waitiri Creek produces.  This is where Jens’s Willamette Valley winemaking experience really shines.

Waitiri Creek’s portfolio of wines includes Pinot Noir, Chardonnay, Pinot Gris, Riesling, and Sauvignon Blanc.  The grape vines  of Waitiri Creek are all hand pruned and hand harvested.  New Zealand is aiming for all of its vineyards to be sustainably accredited by the end of 2012.  Compliance currently stands at about 93% – Waitiri Creek has been fully sustainable for some years.  Another interesting fact about New Zealand wines, 75% of the bottles are all screw tops.  The Kiwi’s are an environmentally conscience country and I applaud them for this effort.

The first vintage of Chardonnay was produced in 1998 and full production of three different varietals in 1999.   In 1996  Paula and Allistar decided that an old church building would serve as the Waitiri Creek tasting room, they needed a structure that would be harmonious with the terroir of the Shanagolden vineyard.  So a search which led them all over the lower part of the South Island, culminating in a visit to Wangaloa, near Kaitangata in 1998.  On first sight, the former Wangaloa Presbyterian Church would have sent less hardy souls running in the opposite direction….but not Paula and Allistar.  Negotiations began with the local community and ownership of the church was secured a year later.

The Waitiri Creek tasting room just celebrated its 10th anniversary at its new vineyard home.   This former Presbyterian church, built in 1893 was moved to its new location at Waitiri Creek 300km in one piece on the Shanagolden Block in 2000.

One of the keys to increased demand for Waitiri Creek wines is consistant quality.   Waitiri Creek has been recognized at domestic and international competitions every year since 1999 across their entire portfolio.  Their expansion into Bannockburn with the purchase of additional Central Otago fruit has now expanded their portfolio to include Rosé, Pinot Gris, Sauvignon Blanc and Riesling.

Pinot Noir

Waitiri Creek Pinot Noir 2007 The nose shows rich varietal layers of cherry and plums supported by an earthy complexity. The depth of fruit on the nose continues on the palate supported by a fine tannin structure, good integration of oak and a length of flavor that lingers on the tongue.

The nose displays complex notes of stewed cherries, cedar and mushrooms. This Pinot Noir shows the elegance of the 2008 vintage with a bright garnet hue and the perfume of violets and rose petals. The fruit driven palate has flavors of wild raspberries with hints of cinnamon, red cherries and succulent plums. On the finish there is a note of thyme and mushrooms. The silky tannins are woven seamlessly into a structure balanced by savory French oak and alcohol.

Rose

Rich strawberry and raspberry aromas dominate the nose and are supported by perfumed floral notes. The palate shows good berry fruit weight with strawberry and white peach aided by creamy texture. This wine is well balanced with a long, lingering, strawberry finish.

Chardonnay

Made in a fruit-driven New World style, this wine shows all the influences of classic Old World winemaking. The palate is rich and succulent with an appealing texture and displays outstanding primary fruit.  

Handpicked grapes were whole bunch pressed and the juice cold settled for two days before being racked to barrels with light yeast. The wine was then cool fermented using both commercial and indigenous yeasts. This Chardonnay spent 10 months in 100% French oak (22% new oak) and underwent 100% malolatic fermentation with weekly lees stirring. The finished wine was then racked, lightly fined and filtered prior to bottling in late-March 2009.

Riesling

This Riesling shows complex aromas of mandarin, pear, honeysuckle and orange blossom on the nose. The body has crisp citrus flavors, offset with spice and good length of finish. This wine has great cellaring potential and additional characters will develop in the bottle over time.

Riesling grapes from two different blocks were handpicked and combined. The grapes were whole bunch pressed using a bag press and then the juice was left to cold settle overnight, before being racked and inoculated with yeast.

Fermentation lasted several weeks with temperatures being maintained less than 13 degrees to retain optimum flavor. Once fermentation was complete the wine was sulphured, racked and blended. The wine was then lightly fined and cold and protein stabilized prior to sterile filtration and bottling in September 2008.

Pinot Gris

Floral and pear notes on the nose lead into a richly textured palate of nashi pear, citrus and spice flavors. The long finish is balanced by fine acidity.

First vintage fruit from Legends (Legends Vineyard, Felton Road) was hand-harvested.  One tank of the Legends juice was chilled with daily lees stirring for four days.  It was then racked taking light lees to blend with the second tank of Legends juice which was settled for one night and then racked clean to blend.  A portion of this juice went to a neutral French Oak barrel.  The blended Legends juice was warmed naturally to 14ºC and innoculated with an aromatic yeast before undergoing cool fermentation until optimal balance was achieved.

The fruit from Annika’s (Annika’s Vineyard, Wanaka Road) was hand-harvested with 50% left on skins overnight while the balance was cold settled overnight and racked with light lees.  The fruit with extended skin contact was racked cleanly.  The two Annika’s components were blended, warmed naturally to 14ºC and fermented using aromatic yeast.  A percentage of this juice was fermented in two neutral French Oak barrels.

The three barrels were stirred regularly after the peak of fermentation and then blended. The two separate tank blends were blended in August and underwent cold and protein stabilization before being lightly fined with isinglass and sterile filtered before bottling.

Sauvignon Blanc

For her 6th birthday, our niece Stella Paris Columbia B. Ramage who lives in Sydney and loves art had a wine named after her. This is a single vineyard, Gibbston fruit.

A nose of passionfruit, gooseberry and capsicum aromas lead to a lively palate displaying good balance and zesty acidity. Best served lightly chilled.

Sauvignon Blanc grapes were handpicked and then was de-stemmed and crushed prior to gentle pressing. The resulting juice was cool stainless steel fermented to retain fruit character. The wine was left on yeast lees for two months to help with mouth feel and complexity. The resulting wine was fined with milk casein prior to filtration and bottling.

Regardless of whether you have been naughty or nice, WineGuyMike has some great holiday wine gift advice.  The very thought of shopping for the “right” wine or wine gift can be cause for great trepidation within the hearts of many.  So Take a deep breath and remember-this is a great time of year to celebrate friendships, family, and to be thankful for the peace and abundance we enjoy.

The holiday season is nigh upon us and it is the time of year, and no matter what holiday we celebrate, Hanukkah, Kwanzaa, Christmas or Festivus we can be assured of one thing-exchanging gifts.

Before you go shopping I recommend making a list of the people you are going to buy wine gifts for.  Ask yourself-what do they like?  What color or style of wine do they drink, how much does that special person usually spend, do they serve wine in proper glasses, or do they use tumblers from their favorite fast food customer appreciation collection?  You get the point a little thought prior to shopping will streamline your adventure.

Shopping for wine or wine related gifts, http://on.fb.me/uYQ1HN, should be a pleasurable and gratifying process, remember this can be fun shopping for the special people in your life.  I was shopping a few days ago at Liquid Planet in Downtown Missoula and realized this is the type of wine and gift shopping experience I desire.  Their retail manager, Heather, has done a beautiful job in merchandising the store, and in particular the wine section.  This probably is like girls gone shoe shopping.

When picking out a gift, there are a multitude of great wine gift ideas.  Let’s keep it simple starting with the wine; red wine on the simplest level is light, medium, or full bodied.  Red wine will have aromas of red or black fruit; you may smell spice, earthiness, or even some tobacco, leather, or maybe a little bacon.  That’s right bacon, many French winemakers would tell you that to have a sense of animal in their wines is a component of “Terroir,” or a sense of place.  Does the special person you are shopping for prefer red wines that express more fruit or do they like wine with more tannin or grittiness?

White wines present very different tastes and scents than red wines.  Aromas in white wines will vary, with scents of flowers, fruit, citrus, or beautiful tropical fruits being common.  In your mouth a white wine may taste tart, express minerals like stone or slate, or it may even be somewhat sweet.

How about wine glasses?  Many are unaware how important wine glasses are.  The Riedel wine glass company has been around for three hundred years.  Their glasses are a masterful combination, artfully blending form and function.  Good wine glasses are designed to allow you to visually examine wine, focus the aroma of the wine correctly, and then deliver the wine on your palate in exactly the right spot. 

Wine decanters are also a terrific gift to consider for a wine lover.  Decanting is generally a process reserved explicitly for red wines.  When a wine is poured into a traditional decanter the wine is thoroughly exposed to oxygen and helps to open the wine and settle the tannins.  There are a multitude of differing decanters; some are even attached right to the bottle-certainly not traditional, but clever nonetheless. 

Aerators are devices of decanting “in the moment.”  This process has gained popularity and can be terrific for spontaneous gatherings or an option when headed to a casual restaurant or bar.  I still prefer traditional decanting but if company arrives unexpectedly at your front door this holiday season, as it is apt to do, and you want to share a glass of wine the aerators are a great option.
